Rice Flour Puttu


              Rice flour puttu is a traditional recipe in South India, especially in Kerala and Tamil Nadu. It is a healthy breakfast and also evening tiffin. This is prepared without salt during fasting time.



Ingredients
Rice Flour 1 Cup
Water 25 ml(luke warm water)
Cashewnut 2 tbsp
Raisins 1 tbsp
Jaggery 2-3 tbsp
Cardamom Powder 1/2 tsp
Coconut 2 tbsp(grated)
Salt a pinch


Method:



Add a pinch of salt to the rice flour. Sprinkle luke warm water and wet the flour (for checking right consistency, make the flour as small ball and touch it. It will break immediately).


Keep the flour on idly plates and steam cook for 15-20 minutes on medium flame.



Meantime, in a pan, add jaggery with 4 tbsp of water and heat it. Bring it to thick consistency (No need for string consistency). Fry coconut in 1 tsp oil without change in colour.


Remove the cooked flour in a separate bowl and add jaggery syrup little by little and mix well. It look powdery but contains small crumbles.

Add fried coconut, cashews, raisins and cardamom powder and mix well.

Note:

  • I have used idli cooker to make this puttu, but you can also use puttu maker as well.
  • Instead of jaggery syrup, sugar can also been used.
  • Salt is optional.
