Boondi Ladoo is a traditional sweet recipe of South India which is made with gram flour. It is a mouth-watering sweet which is specially prepared during diwali time. This is all - time favourite sweet for everyone in my family.

Gram Flour / Besan | 2 cup |
Sugar | 1 3/4 cup |
Water | 3/4 cup (for sugar syrup) |
Cashewnuts | 15-20 chopped |
Almonds | 10 (optional) |
Raisins | 20-25 |
Cloves | 6 |
Rose water | 1/2 tsp (optional) |
Cardamom Powder | 1/2 tsp |
Oil | to deep fry |
Method:
Boil water with sugar and bring to single string consistency ( to check the consistency if a drop of syrup is taken between thumb and index fingers, it will form single thread consistency). Add rose water and cardamom powder to the syrup. Keep it aside.
In another mixing bowl, add gram flour and add necessary amount of water to form flowing batter. To check the consistency pour the batter on boondi laddle. It will drip down from the laddle immediately.
Heat the oil in a kadai. When the oil is hot pour little batter over the laddle by holding the hole laddle just above the oil and make boondi's by spreading in circular motion. Drain the boondi's from oil and add directly to sugar syrup. Finish with same process with entire amount of batter. Mix the syrup each time you add the boondi.
Fry cashewnuts, almonds, cloves and raisins in oil or ghee. When it is still warm, take little portion of boondi in a plate and mash them with hand.
Then make small balls to shape them as ladoos. Follow the same way, till all boondi's are finished.
Note:
- If the batter consistency is not right, it will form as flat tails.
- To avoid sugar crystalisation, you can also add few drops of lime juice to it (4-5 drops).
