This is one of the best lunch box recipes. Actually I don't know what to do with capsicum before coming to know about this rice. The full credit goes to vahrehvah site from where I have learned this recipe.
Ingredients | |
Capsicum / Bell Pepper | 1 cup |
Peanuts | 3 tbsp |
Mustard Seeds | 1/2 tsp |
Cumin Seeds | 1/2 tsp |
Urad dhal | 2 tbsp |
Channa dhal | 2 tbsp |
Coriander Seeds | 1 tsp |
Curry leaves | 1 stick |
Red Chilli | 2 or 3 |
Garam Masala | 1/2 tsp |
Butter | 2 tbsp |
Method:
Dry roast peanuts separately. Dry roast mustard, cumin seeds, urad dhal, channa dhal, coriander seeds, curry leaves and red chilli. Grind the roasted items along with garam masala powder and keep aside.
Heat a pan, add butter. Then add capsicum and cook till raw smell separates. (But it should be crunchy).
Off the stove, add salt and ground masala. Finally add rice and mix well.
