Adhirasam




            Adhirasam, an awesome recipe is a traditional sweet of tamil nadu. Jaggery is the main ingredient used instead of cane sugar and it is 
rich in iron. I learned this recipe from my grandma who used to make for festivals and vaccation every year.







Ingredients:




Raw Rice         - 200 gm
Jaggery           - 250 gm
Cardamom Powder - 1 tsp
Oil                 - to fry







Method:



1. Soak the rice for 2 hours and drain water.
2. Dry the rice in a cloth for 45 Minutes and grind it.
3. Add 1/4 cup of water to jaggery and make single string consistency.
    (for right consistency pour little jaggery in a plate and roll into ball)
    If you get ball, remove syrup from stove.
4. Add cardamom powder to the Jaggery syrup.
5. Add rice flour little by little to jaggery syrup and mix well with spatula.
6. Leave that batter for 24-36 hours for getting perfect texture, so that it looks like a dough.
7. Take a small amount of batter as balls and flatten it to 1/4 inch thickness in greased polythene sheets.
8. Deep fry in hot oil in medium hot. After gets cooked press them gently to filter oil.
9. Put on paper towel so that excess oil will be absorbed.
